Aubergine Spread

Aubergine Spread:

Ingredients:

  • 4 pcs Aubergines
  • 1 pc Onion
  • 2 cloves of Garlic
  • Salt
  • Pepper
  • 200 g Mayo
  • juice of 1 Lime
  • 5 g Dijon Mustard

Method:

Pierce the washed aubergines with a fork or knife then bake it in the oven on 250 degrees celsius. Put the aubergines in a mixing bowl, cover with cling film and let them cool down. When it cooled a bit, peel the aubergines and let them drip on a sieve until completely cools. Finely cut the onions and then the aubergines as well, then mix all the ingredients. Season with salt and pepper according to your own taste. If you feel like it needs more garlic or lime juice feel free to add those as well.
