Ramson "Scones"

Ramson "Scones":

Ingredients:

  • 500 g Flour
  • 250 g Butter
  • 8 g Salt
  • 1 Egg
  • 300 g Sour Cream
  • 25 g Yeast
  • Melted Butter
  • Egg for spread
  • Grated Cheese

Method:

Place the ingredients into the bowl of a stand mixer, and dice the butter. Knead into a homogeneous dough on a low speed. Transfer the dough into a lightly floured bowl, cover it, and let it proof for 1 hour at room temperature.

On a lightly floured surface, roll the dough out into a rectangular shape, brush it with melted butter, then fold it with a simple (single) fold. Cover and let it rest at room temperature for 15 minutes. Repeat this folding and resting process two more times, making sure to let it rest between folds.

Roll the dough out on a lightly floured surface to a thickness of 1–2 cm. Brush it with egg wash, then sprinkle with grated cheese. After cutting out circles with a biscuit cutter, place them on a baking sheet lined with parchment paper, cover, and let proof for 1 hour.

Bake in a preheated oven at 180°C until done.
