Creamy Garlic Soup

Creamy Garlic Soup:

Ingredients:

  • 3 whole Garlic
  • 125 g Shallots
  • 3 cloves of Garlic
  • 500 g Water
  • 200 g Cream (22%)
  • 15 g Corn Starch
  • Salt

Preparation:

Cut the end of the 3 whole garlic, wrap them in oiled and salted aluminum foil. Preheat the oven to 180C° and bake the garlic for 30-35 minutes. Bake it until it becomes completely soft, you should be able to squeeze it out from the peels. While the garlic is in the oven finely chop the shallots and cloves of garlic then start to fry it in hot oil. Add the baked garlic and the water and blitz it using a hand blender. Mix the corn starch with the cream and pour it into the soup. Boil it for 2-3 minutes. Stir it constantly so it doesn't burn on the bottom. Sieve it and season it with salt.



Crouton:

Ingredients:

  • 3-4 slices of Bread
  • 2 cloves of Garlic
  • Olive Oil
  • Thyme
  • Salt
  • Pepper

Preparation:

Cut the bread to small cubes and put it in a bowl. Pour a touch of olive oil on it. Season it with salt and pepper then mix it thoroughly. Put the cubes on a baking tray covered with a sheet of baking paper. Add the thyme and cloves of garlic next to it and bake it at 160C° until it becomes golden brown. (It should take around 10-15 minutes)
